Home Deserts Variation of kiwi fruit exotic

Ingredients 

  • 12 kiwifruit 
  • 1 pineapple
  • 2 limes
  • 4 passionfruit
  • 3 egg-yellows 
  • 10 cl of rum
  • 1 teaspoon of honey

Preparation

Skin the pineapple, scoop out the middle, dice half of it and put the other half in a mixer with the juice of one lime and pour into 8 small glasses.

Scoop out the kiwifruit and dice the flesh of 8 of them, putting the other 4 in a mixer with the juice of the other lime, then pour carefully into the glasses, over the pineapple.

Halve the passionfruit and scoop out into a punchbowl and marinate with the diced pineapple and kiwifruit.

Pour into the shells of the kiwi and passionfruit.

Place on individual plates with the glass. At the last moment, place the 3 egg-yellows, the rum, the honey, the lime juice and a zest of lime in a saucepan.

Whip rapidly over a low heat until frothy.

Pour over the fruit and the glasses.

Serve immediatel
