Preheat oven to 180 ° C - gas 6 Pierce the roast with garlic cloves. Place it in a baking dish.
Peel, wash and cut Vitelottes into thin slices. Wash, stone and cut plums into slices. Around the roast, place the vitelottes potatoes and plums. Add raisins, honey, salt, pepper and a large knob of butter.
Prepare the chicken broth, pour it over roast and bake about 1 hour, turning the roast over halfway through cooking. Check that it slowly browns and baste the preparation with cooking juice.
